Taco Toppings Three Ways

For the Cilantro-Pepita Spread:

  1. Pre-heat oven to 350 degrees F.

  2. In a medium mixing bowl, mix pepitas with 1 tsp. olive oil and 1/4 tsp salt.

  3. Spread pepitas out on a baking sheet, roast 10 minutes, and let cool.

  4. Once cooled, place pepitas in a food processor or high power blender.

  5. Add cilantro, juice from the lime, paprika, garlic, and olive oil. Blend.

  6. Gradually add water as needed for desired consistency. Season with more salt to taste.

  7. Serve spread on tortillas for tacos.

    **This spread is also fantastic on toast topped with avocado!

For the Guacamole:

  1. With a fork, smash avocado in a medium mixing bowl with chopped onion and cilantro.

  2. Add lime juice gradually to taste (I use a whole lime).

  3. Add minced garlic or garlic powder as well as salt to taste.

For the Yogurt Sauce:

  1. In a small mixing bowl, whisk together yogurt, juice from 1/2 lime, cilantro, garlic powder and paprika.

  2. Add salt to taste. Serve with tacos.


1 c. pepitas (pumpkin seeds)
1 tsp. olive oil
1/4 tsp. salt
2 cups chopped cilantro
1 lime
2 cloves of garlic, finely chopped
1/4 tsp. paprika
1/3 c. olive oil
1/4 c. water
salt to taste

2 avocados
2 Tbsp. finely chopped onion
3 Tbsp. finely chopped cilantro
Juice of 1/2 lime (more to taste)
1/4 tsp. salt (more to taste)
1 clove garlic, finely minced (or 1/4-1/2 tsp. garlic powder to taste)

1 plain Greek yogurt
1/2 lime
1 Tbsp. finely chopped cilantro
1/2 tsp. paprika
1/4 tsp. garlic powder
Pinch of salt (more to taste)

Mixing bowls + whisk
Food processor or high-powered blender (such as Vitamix)
Baking sheet

10 minute prep
5 minute active cook time
10 minute inactive cook time

Venzi’s Notes

One of my favorite meals to make for other people is tacos. Who doesn’t love tacos, right?! I also love making toppings from scratch when possible, but it’s a lot of work. These have become my go-to quick and easy taco toppings to serve with tacos. Sometimes, I’ll make just one. Other times, I’ll make all 3! I’m especially fond of the cilantro-pepita spread. I’ts awesome on tacos, but I am also very fond of adding it to avocado toasts, morning omelettes, or grilled chicken.
