Caprese Frittata

  1. Pre-heat oven to 350 degrees F.

  2. Heat 1 Tbsp olive oil over pan at medium heat.

  3. Add garlic and cook 30 seconds until fragrant

  4. Add 1 can of Muir Glen Organic diced tomatoes and cook until they are slightly reduced. 8 to 10 min.

  5. Add balsamic Vinegar and cook 1 more minute.

  6. On the side, lightly coat a 9x9 baking dish with olive oil.

  7. Add tomato mixture from stove to oiled dish.

  8. Whisk the eggs, parmesan, salt and pepper quickly in a separate bowl until slightly frothy.

  9. Add whisked ingredients to 9x9 baking dish.

  10. Slice and place the fresh mozerella across the top of the dish.

  11. Bake for ?min (top should be slightly brown)

  12. Top with fresh basil and serve!!!


1 can diced Muir Glen Tomatoes
8 eggs (large brown)
1/2 cup shredded parmesan
1 ball fresh mozzarella
4 cloves garlic
1 Tbsp. balsamic vinegar
2 Tbsp. olive oil
1/4 cup shredded basil

9x9 baking dish
Saute pan
Mixing bowls + Whisk

15 minute prep
10 minute active cook time
40 minute inactive cook time

Venzi’s Notes

I’ve found that the Caprese Frittata is the easiest way to cook a classy egg dish for brunch! This Frittata is simple and can easily be spiced up with other ingredients in your fridge. Mushrooms, kale, leaks, and sweet onions are all great additions that will make things different when making it again!
