Coconut Cashew Oatmeal

Makes 2 Servings

  1. If topping oats with the toasted coconut and cashews, pre-heat oven to 300 degrees F. Toast chopped cashews for 10 minutes, and add shredded coconut in the last 5 minutes of toasting. Set aide to top oatmeal.

  2. Add oats, nut or oat milk, 1/2 c. coconut milk, maple syrup, 1 Tbsp. cashew butter, vanilla, and salt to a small sauce pan. Simmer mixture on low heat for about 15 minutes, stirring every few minutes.

  3. While the oatmeal cooks, whisk together 1/4 c. coconut milk and 1.5 Tbsp, cashew butter. Add a drizzle of maple syrup if desired. Set aside for serving.

  4. Divide oatmeal in 2 large bowls. Top with the coconut cashew cream. Add toasted coconut, cashews, berries, cinnamon, or any combination of these ingredients. Enjoy!


1 c. rolled oats
2 c. nut or oat milk
1/2 c. full-fat coconut milk + 1/4 c. full-fat coconut milk, divided
1 Tbsp. maple syrup
1 Tbsp. cashew butter + 1.5 Tbsp. cashew butter, divided (I use my vanilla coconut cashew butter!)
1 tsp. vanilla extract
pinch of salt
2 Tbsp. chopped cashews, 2 Tbsp. unsweetened shredded coconut, 1/2 c. berries, pinch of cinnamon (optional, for serving)

Is there anything better than a big, creamy bowl of oatmeal on a cold or rainy or cold and rainy day? Absolutely not. I so look forward to eating it when I wake up on cold mornings which is exactly what happened today. A chilly, early morning bowl of oatmeal with last night’s SNL playing in the background. Nothing more perfect, ya’ll.

I originally created this recipe to compliment my Vanilla Toasted Coconut Cashew Butter recipe, and does it ever. I HIGHLY recommend making the nut butter and adding it to everything, including this oatmeal. However, if that feels like a lot of work, you can buy cashew butter! It can be pricey, but health food stores generally also sell individual packs. The cashew butter and coconut milk are the most important parts of this recipe — it’s not the same without them! They are SO delicious combined, and together, they make the creamiest bowl of oatmeal I have ever eaten. The oatmeal is so delicious with nutty flavors from toasted cashews and coconut as well as the bright berries. But customize however you want.
